We have been farming oysters for over 20+ years, mostly in the South West of France (Hossegor, Arcachon) and Brittany (Etel).
Over the years, we have expanded our breeding infrastructure to make our own wild and triploid Oysters, which gives us ability to distribute oysters all year long.
Our oysters get their own unique taste and texture from the location where they’re grown, how they’re grown, and other climatic factors that you find in our different farms.

« BISCAY » Spéciale
Hand Selected and grown in a pampered environment for up to 6 more months than our Atlantic Fine which gives the oysters a sweeter taste with more meat (up to 17% more fleshier).

Oysters grown for 2 to 3 years harvested in a wild and natural environment. The Atlantic « fine » is in perfect harmony with the Atlantic Ocean.

Our Farms
At Oyster France we are confident that each time you savor our oysters, the taste experience will be like a personal journey along the French Atlantic coast of Brittany to the Basque Country where the oyster farms are located. Oyster France farmer Jérôme Labeguerie and his team passionately cultivate our oysters adhering to ancient « French » methods in combination with our unique sea water environments. Jérôme brings 25 years of farming experience and dedication to delivering to your plate and palate these oysters with exceptional taste and quality.
HOSSEGOR FARM
Located in the South West of France, Hossegor has 1 park where our oysters grow through Bag Farming and we produce our own larvae to seeded shells. It is also the main distribution center where the oysters are being prepared and shipped out.https://www.youtube.com/watch?v=GG2L4QxJAjc
ETEL FARM (Brittany)
Etel is where the main processing facility is located and is capable of sorting up to 7 tons of oysters per day. This is where most of the ATLANTIC oysters are grown across 15 parks through 5 hectares.
ARCACHON FARM
This is where we bring our oysters from Etel to rest 3 extra month (Seabed Farming) to grow into our famous BISCAY oyster. This process enriches the oysters with more flesh and a nutty flavor.
Process

1 .OYSTER SEEDIND & RACK FARMING

OYSTER SEEDING
8 months to grow from larvae to seeded shells. Our coupelle collectors will extract the shells.
DISTRIBUTION CENTER
Once we receive the oysters from Arcachon we reinstate to the Hossegor lake for a month. We store the oysters in a purification pool for 48 hours before worldwide distribution.

Two farming methods are used to cultivate our oysters: Rack and bag farming and Bottom culture.
